This is one of my favorite recipes. It is quick, easy, tasty and super healthy. Basically, it is everything you could want from a recipe. All you need is large pot or anything above 2qt and a blender. This recipe can be used as a side or eaten as meal. Think: Paleo Steak and Mashed Potatoes Anyone? If I use it as a side I make 1/2 of veggies per person. If I make it as meal I use a whole pound of veggies person. The Cilantro is optional, but I find it gives the recipe a nice extra little bite.
1lb frozen or fresh cauliflower
Butter or Ghee to taste (I use 4oz)
Dried Cilantro to taste
Salt to taste
Put cauliflower in a large pot with about 1 cup of water. Bring water to a boil. Then switch to medium heat for 7-10mins or until cauliflower is done. Put all ingredients in a blender and blend. You’re done! Enjoy!
