Broccoli Soup

This is a hearty soup that is a great recipe for the winter time.  It quickly became one of my favorite things to eat and it tastes so good you can’t believe it’s quite possibly one of the best things you can eat for your health.  The primary ingredients are broccoli, hemp seeds and onions which are three of the best alkalizing, detoxifying and beautifying foods in the world.  You can also saute the onions in coconut oil if you have fallen in love with cooking with this oil.  I make my own chicken stock which is a great source of trace minerals.  This soup also serves as a great medium to sneak in some fantastic health foods typically I’ll add some flax-seed oil or olive oil right before I serve this dish.  Brewers yeast will add texture and a heartier texture, it’s also loaded with trace minerals, vitamins (B-vitamins in particular) and a great source of protein.  Liquid Aminos can be added instead of brewers yeast if you like the taste of soy sauce.  Other ingredients that I have used in this dish are pine nuts (garnish or instead of hemp seeds), lemon, parsley(garnish), garlic (sautéed with the onions) and even bacon!  I encourage you to try different combinations of garnishes and find your favorite flavor.  The brewers yeast, Liquid Aminos and lemon all compete for flavor tho so try not to use one if you use the other.

  • 1lb of broccoli florets (I use frozen)
  • 1 medium onion
  • 2 Tbl coconut oil
  • 6 Tbl hemp seeds (sometimes I’ll use pine nuts)
  • 2 cups of chicken/beef or vegetable stock
  • 1-3 Tbl olive or flax seed oil (optional)
  • 1-6 cloves of minced garlic (optional)
  • salt and pepper to taste
  • brewers yeast, Liquid Aminos or lemon (optional)
  • parsley for a garnish
  • Pine nuts for a garnish
  1. In a large sauce pan saute onions with coconut oil until slightly brown on high heat.  If you’re adding in the minced garlic do this after you have sautéed the onions for about 2 min.
  2. Add in broccoli and stock and cover the pan.  I sometimes use a cast iron pan with no lid and it comes out just as good if not better.  Let this cook on high heat for about 10 min.  If you let the broccoli cook longer your soup will much thicker with more flavor.  The less you cook the soup the more nutritional benefit you will have.  If you are getting used to vegetables I recommend that you cook the broccoli without a lid and reduce the mixture down until there is no stock to boil off.
  3. Place the soup in a blender and blend.  You can add in your olive oil or flax-seed oil now.
  4. Salt and pepper to taste.
  5. Garnish with whatever you like. My personal preference is brewers yeast, pine nuts and a sprig of parsley.
